Fast-casual dining transformed the way a generation eats. Fresh ingredients, assembled to taste, served fast — it reshaped Mexican food, then Mediterranean. Yet one of the world's great cuisines was left behind. Indian food, rich and beloved, was seen as heavy, complex, and impossible to customize.
We looked closely and saw something different. The cuisine wasn't the problem. It never had been. The format was. Indian food had simply never been given the system that made fast-casual work everywhere else.
So we set out to build it: the first modern Indian bowl brand designed from the ground up for everyday eating. Authentic in flavor, light in feel, and entirely yours to compose.
No scaled Indian equivalent of the fast-casual leaders existed.
The format is broken — not the cuisine.
Every brand needs a core idea — a tension it exists to resolve. Ours is the warmth of a home-cooked Indian meal, held together with the freedom to make it exactly your own.
We made an early, deliberate bet on warm bowls. A warm bowl reads as a meal, not an assembly. In a busy day it offers a moment of comfort — and comfort, we found, is what brings people back.
Hold comfort and control together, and you get food that fits every lifestyle: indulgent when you want it, light when you need it, yours either way.
India isn't one cuisine — it's dozens, each shaped by climate, trade, and generations of home cooking. Our signature bowls aren't a greatest-hits list. They're a map, each anchored to a city and the flavor logic that defines it.
Each signature is also a template — a confident first step for newcomers, and a base for regulars to riff on.
Our biggest architectural decision was to build the entire system around sauces, not toppings. In Indian cooking, depth comes from gravy — spices bloomed in fat, simmered slowly, layered over time.
It sounds small. It isn't. Fullness and satisfaction are driven by composition and balance — the interplay of base, protein, and sauce — far more than by sheer volume.
Turmeric, cardamom, dried chilies, cumin — the backbone of every gravy is sourced from the regions that grow it best. Spice at origin isn't a slogan; it's the only way to reach the aromatic depth these recipes were built on. We pair it with low-waste, compostable packaging — food that respects its roots should respect the planet too.
The finish is yours — fresh toppings, dry toppings, a finishing sauce, as many as you like. It's the moment a menu item becomes your meal.
